Peppers and Chilies

Right now I'm into Jamie Oliver, Giada, Barefoot Contessa and some Tyler Florence.  This recipe, Peppers and Chilies, is from Jamie Oliver's new show.  For some reason you can't get a printed version on the web site, lucky for me I recorded the show.  I'm also into my DVR.  

This is my second version of making these peppers.  The first one contained sweet chilies, it was really good, but not spicy enough for my trusty assistant.  He went out this time and picked out the chilies and came back with all spicy ones.  Since he wanted spicy I decided not to remove any of the seeds in the chilies!  And believe me it was spicy.

Peppers and Chilies:  Jamie Oliver 2008

1 red bell pepper
1 yellow bell pepper
4-5 assorted chile peppers
1 pkg. cherry tomatoes (~10-15)
2-3 garlic cloves
1 tbsp capers
2 tbsp fresh basil
1 tbsp red wine vinegar
olive oil
5-6 black olives
4 slices pancetta

Preheat oven 450.  Cut the bell peppers length wise, remove seeds and membrane.   Chop assorted chilie peppers, tomatoes, garlic, basil and combine in a large bowl.  Add capers, red wine vinegar, olive oil, black olives, salt & pepper.  Using your hand combine and mix.  Salt and oil the bell peppers.  Place them on a shallow baking dish.  Stuff the bell peppers with the mixture.  Top off the peppers with pancetta.  Cover with tinfoil and bake for 15 minutes, remove and cook for another 15-20 minutes.
